For some reason, my taste buds crave anything with soy sauce. This satisfied that salty and sweet craving!
Yields: 2-4 servings.. depending on how hungry you are.

Korean Beef & Basil Jasmine Rice
1 lb. lean ground beef
1 head of broccoli, chopped
1 Tbsp sesame oil
¾ cup low-sodium soy sauce
¼ cup packed brown sugar
½ yellow onion, diced
½ tsp fresh ginger, minced (I used the packaged tube stuff)
3 cloves garlic, minced (I used a Tbsp of the jarred stuff)
½ tsp crushed red pepper flakes (or 1 Tbsp chili paste)
4 fresh basil leaves, chopped
1 cup uncooked jasmine rice

  1. Mix the soy sauce, brown sugar, onion, ginger, garlic and red pepper flakes (or chili paste) together in a small bowl.
  2. Cook your ground beef in a skillet on medium high, with the sesame oil until well done, then add the broccoli and cook until bright green.
  3. Pour in the soy sauce mixture into the pan and combine. Let it simmer for a few minutes. If necessary, add cornstarch to thicken.
  4. For the rice, cook as recommended on the package. Once done cooking, stir in chopped basil for extra flavor.
  5. Serve the beef and broccoli over the rice.
