Korean Beef & Broccoli with Basil Jasmine Rice
For some reason, my taste buds crave anything with soy sauce. This satisfied that salty and sweet craving!
Yields: 2-4 servings.. depending on how hungry you are.
Korean Beef & Basil Jasmine Rice
1 lb. lean ground beef
1 head of broccoli, chopped
1 Tbsp sesame oil
¾ cup low-sodium soy sauce
¼ cup packed brown sugar
½ yellow onion, diced
½ tsp fresh ginger, minced (I used the packaged tube stuff)
3 cloves garlic, minced (I used a Tbsp of the jarred stuff)
½ tsp crushed red pepper flakes (or 1 Tbsp chili paste)
4 fresh basil leaves, chopped
1 cup uncooked jasmine rice
- Mix the soy sauce, brown sugar, onion, ginger, garlic and red pepper flakes (or chili paste) together in a small bowl.
- Cook your ground beef in a skillet on medium high, with the sesame oil until well done, then add the broccoli and cook until bright green.
- Pour in the soy sauce mixture into the pan and combine. Let it simmer for a few minutes. If necessary, add cornstarch to thicken.
- For the rice, cook as recommended on the package. Once done cooking, stir in chopped basil for extra flavor.
- Serve the beef and broccoli over the rice.
